Earlier local vendors were operating the kitchen services and there were many loop holes & drawbacks in old system. Local vendor was not able to cope up with the quality, hygiene and the expectation of the hospital management.

I would say that local vendor system cannot meet the expectation and demand of hospital as well as market because it involves huge amount of investment, knowledge of industry, Risk taking capacity and continuous updation in technology.
